Grilled Pizza Portobellos with Lemon-y Cashew Ricotta

This may be one of the most creative recipes we have on this website. Instead of using pizza dough at all, or anything similar, you will use portobello mushrooms as the base! The entire pizza will be held inside one of these large, round mushrooms. Doesn’t that sound great?
